The Knightshades were created as expendable shock troops and as literal weapons of terror, intended to exploit the superstitious fantasies of the Waffen SS and make them belive that they were facing the animated corpses of thirteenth-century Teutonic Knights. Galen deliberately designed them to be stupid and lacking in personality, because he had ethical qualms about applying the word "expendable" to any sapient being, even an artificial one. On their own, they're about as smart as Ogrons, and with even less initiative, although they can understand and obey simple verbal commands perfectly well. But Galen never intended them to operate independently. They're tied to each other, and to Galen's K9 unit, Gwyllgi, in a subspace communication network, meaning that Gwyllgi is able to supply them with all the smarts and skills that they need. Their voices are deep and sepulchral, appearing to echo as if from inside a tomb. Although they understand modern English, German and Polish, they speak only in medieval German and Latin, to reinforce the illusion of their thirteenth-century origins.
